CHUNKY MANGO SALSA - enjoy me with Mango Chicken

A Quick & Easy Fresh Mango & Lime Salsa


2 fresh mangos – roughly diced

1 avocado – roughly diced

½ red capsicum – finely diced

½ red onion – finely diced

1 tbls lime juice

1 tbls finely diced mint or coriander

Splash of olive oil & salt & pepper to taste


Add lime to avocado. Place in bowl with other ingredients. Serve with Sabroso Spices mango chicken and white rice.

Will keep 2 days in refrigerated. Serves approx. 4. (delicious with any cooked meats – perfect for hot summers day bbq)


Vegetable Couscous - Enjoy me with Moroccan Lamb Tagine

Ingredients: – SERVES 4

400grams couscous

1 carrot - cut into strips

1 zucchini – cut into strips

1 small onion – finely sliced

1 tsp chopped garlic

4 sprigs broccoli

4 tblsp frozen peas

4 tbl beef or chicken stock

Pine nuts – lightly toasted

Salt & Pepper


Make couscous according to directions on the packet. Heat a little oil in wok, stir fry garlic, onion, carrot & zucchini until cooked but not soggy. Add a little more oil & the couscous, peas & stock. Stir till peas are soft. Steam broccoli in pan with a little salt, until just cooked, serve on top of vegetable couscous, top with toasted pine nuts
